Make the rice as instructed in a pot or InstantPot (video).
Prep the vegerables.
Heat 1 tbsp sesame oil in a skillet over medium high heat. Add ground pork and season with salt and pepper. Stirring frequently and cook until browned. Remove and set aside.
Save the pork fat. Add onion, garlic and saute until onion is transparent. Add in 1 tbsp of sesame oil. Add in carrots, cabbage, red pepper flakes, and salt/pepper to taste. Cook for 3-5 mins, stirring occasionally until softened. Set aside.
Grab another pan and add all the ingredients for the sweet and sour sauce. Stir with a wisk or fork over medium heat until the sauce have thickened, about 5 minutes. Remove from heat.
Add the cooked pork into the cabbage mixture and combine. Then add on 3/4th of the sauce and combine together.
Serve it over Jasmine rice. Drizzle on the remaining sweet and sour sauce. Sprinkle on top with green onion. Enjoy!
