Lemon Pan Fried Tilapia with Jasmine Rice

INGREDIENTS
- 1 Cup Della Basmati Rice
- 2 6-oz Tilapia fillets
- 1 zucchini, sliced
- Cilantro plucked
- ¼ tsp Garlic powder
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
- 1 tbsp Olive oil
- ¼ tsp red pepper flakes
- ¼ tsp Italian seasoning
- 1/4 cup Salted butter
- 1 tbsp Lemon juice (from 1 lemon) + slices
- 1/4 tsp Garlic powder

Prepare Della Jasmine Rice according to the package instructions. Chop the vegetables as needed. Pat the fish fillets dry with paper towels, then season both sides with garlic powder, sea salt, and black pepper. Set aside.

Heat olive oil in a large skillet over medium-high heat for about 2 minutes. Place the tilapia fillets in a single layer, cooking in batches if necessary. Let them sear for 3-4 minutes until the edges turn opaque. Flip and cook for another 2-4 minutes until fully cooked, reducing the heat to medium if needed. Once done, remove the fish from the pan and cover.

Lower the heat to medium-low and prepare the lemon butter sauce in the same pan. Drizzle some sauce onto each serving plate, place the seared tilapia on top, and spoon more sauce over the fillets.
