Chicken and Kale Sauté with Jasmine Rice

INGREDIENTS
- 1 Cup Della Basmati Rice
- 2 tablespoons olive oil
- 1lb chicken breasts, cubed
- ½ tsp salt
- ¼ tsp black pepper
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- Pinch red pepper flakes
- 1 bunch flat-leaf kale, stems removed and leaves coarsely chopped
- 1/4 cup dry white wine
- 1/4 cup shaved parmesan cheese
- 1/2 tbs lemon juice

Prepare Della Jasmine Rice according to the package directions and chop the vegetables.

In a large skillet, heat the oil over medium heat until shimmering. Add the chicken, season with salt and pepper, and sauté for 5 to 7 minutes until fully cooked. Transfer to a plate and set aside.

In the same skillet, add the onion and garlic, cooking for about 2 minutes until the onions start to soften. Stir in the kale, wine, and a pinch of salt. Cover and let it cook for about 5 minutes, stirring occasionally, until the kale is tender. Return the cooked chicken and any juices to the skillet. Stir in the Parmesan, red pepper flakes, and lemon juice, mixing everything together.
