Black Bean and Sweet Potato Brown Rice Casserole

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 2 cups vegetable broth
- 1(15-ounce) cans black beans, drained and rinsed
- 1 large sweet potato, peeled and diced
- 1 medium onion, chopped
- 1 cup salsa
- 1 tablespoon taco seasoning
- Garnish: cilantro, hot sauce

Prepare the vegetables and preheat the oven to 400°F.

In a microwave-safe cup, heat the vegetable broth for 2 minutes. While it warms, spread the black beans, sweet potatoes, onions, and salsa evenly in a 9×13” baking dish. Stir everything together, then sprinkle the uncooked Della Basmati Brown Rice evenly on top. Carefully pour the hot broth over the casserole, making sure the rice is fully submerged. Sprinkle taco seasoning over the top and mix well.

Cover the dish tightly with aluminum foil and bake on the middle rack for 65-75 minutes. Once done, let it sit covered for a few minutes before serving.
