Sesame Kale & Beef Jasmine Rice Bowl

INGREDIENTS
- 1 Cup Della Basmati Rice
- ½ cup water
- 2-3 tbsp rice vinegar
- 2 teaspoons honey or sugar
- ½ tsp salt
- 1 carrot, shaved
- 3 tbsps gluten-free tamari
- 2 tbsps honey or sugar
- 1 tbsp sesame oil
- 1 tsp tapioca flour
- Sambal oelek, to taste
- 2 tsp sesame seeds
- 2 tbsp sesame oil
- 1 pound ground beef
- 2 cups of kale, torn
- 2 eggs

Cook Della Jasmine Rice as instructed. Prep the pickled carrots: shave the carrot, add in water, rice vinegar, sugar, and salt. Mix and set aside. Prep the beef stir sauce: combine the tamari, honey, sugar, sambal oeklek, and tapioca flour.

Heat half the oil on medium-high, add in ground beef, break into tinier pieces, and brown the beef. Stir to cook the other side of the beef. Add in half of the sauce and stir to coat. Then add in kale and saute until semi-wilted, about 1-2 minutes. Cover and let the steam cook the kale.

Add the rest of the oil. Once hot, crack in both eggs but make sure to separate them while frying so it’s easier to pick up later. Cook for 1-2 minutes until the edges and underside are a bit brown. Flip it and cook for another minute. Set aside.

Set your bowl with cooked Della Jasmine Rice, add in pickled carrots, ground beef, fried egg, sesame seeds and a drizzle of the beef stir sauce. Enjoy!
