Spinach White Bean Sausage Soup with Basmati Brown Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 8 ounces sausage links, cut into 1/2-inch slices
- 1 medium onion, chopped
- 1 garlic cloves
- 1 can cannellini (white kidney) beans, rinsed and drained
- 1 (14.5 oz) can no-salt-added diced tomatoes (undrained)
- 3-4 cups of reduced-sodium chicken broth
- 1 tsp Italian seasoning
- pepper & salt to taste
- 2-3 cups coarsely chopped spinach

Make the Brown Rice in the InstantPot as shown. Prep the veggies.

Heat a large pot and cook the sausage, onion, and garlic for 5 minutes until the sausage turns brown and the onion becomes soft. Get rid of the extra fat, if needed. Add beans, tomatoes, broth, Italian seasoning, salt and pepper. Let it come to a boil, then lower the heat, cover the pot, and let it simmer for 5-7 minutes.

Now, add spinach. Let it simmer without a lid for 1 to 3 minutes more until the spinach wilts.
