INGREDIENTS
Cook the Jasmine rice as per package instructions, adding salt and butter as desired.
Prep vegetables. Season shrimp with salt and pepper.
Heat oil in a pot over medium heat. Add in onion and garlic, saute for 1-2 minutes. Stir in diced tomatoes and add in some salt and pepper to taste.
Add in ketchup and water/stock, let it simmer until the tomatoes are softened. Add in sesame oil, soy sauce and brown sugar. Stir together and let it simmer for 1 minute.
Add in the shrimp and cook until shrimp are cooked through. Then mix together the corn starch and water, add into the pan and mix well until the sauce is thickened.
Serve your tomato shrimp over Della Jasmine Rice with some green onion sprinkled on top. Enjoy!
