INGREDIENTS
Prep vegetables to your liking. Add half of the Old Bay seasoning to cover the pork chops.
Heat oil over medium heat. Pan-sear the pork chops in the skillet for about 2-3 minutes on each side, just until golden brown. Remove the pork chops and set them aside.
In the same skillet, add the chopped onion and bell pepper. Add half of salt & pepper to taste. Sauté for about 1 minute until they start to soften.
Stir in Della Rice, the remaining Old Bay seasoning, salt, pepper and mix. Pour in the can of tomatoes with green chiles, can of black eyed peas, chicken broth, and worcestershire sauce. Mix well.
Place cooked pork chops on top of the rice. Bring the mixture to a simmer. Cover the skillet with a lid and reduce the heat to low. Let it simmer for 25 minutes, or until all the liquid is absorbed and the rice is cooked.
Spoon rice onto plate and set the pork chop on top, Then sprinkle on parmesan, parsley, and pepper. Enjoy!
