Korean Pork and Rice Skillet

INGREDIENTS
- 1 Cup Della Jasmine Rice
- 2 pc of pork tenderloin medallion
- 1 tbsp soy sauce
- 1 tsp gochujang (Korean chili paste)
- 1 tbsp honey
- 1 tbsp sesame oil
- 2 cloves of garlic, minced
- 1 red onion, thinly sliced
- 1 tsp ginger
- 1 carrot, julienned
- Salt and pepper to taste
- 2 cups water
- Optional toppings: sliced green onions, toasted sesame seeds

Make the rice as instructed in a pot or InstantPot (video).
In a bowl, combine the soy sauce, gochujang, honey, sesame oil, and minced garlic. Add the thinly sliced pork to the bowl and marinate for at least 30 minutes.

Heat sesame oil over medium heat. Add in onion and carrots, saute for 2-3 minutes. Then add in ginger and saute until fragrant.
Stir in the marinated thinly sliced pork and cook for 5 minutes or until browned.

Serve the Korean pork and rice skillet hot, and garnish with sliced green onions and toasted sesame seeds, if desired.
