INGREDIENTS
Make the rice as instructed in a pot or InstantPot (video).
Prep the vegerables. Cover pork tenderloin with adobo seasoning.
Heat oil in a large skillet over medium-high heat. Add the pork tenderloin and sear it on all sides until browned. Set aside.
Add in onion and garlic. Saute until onion become translucent. Add in carrot, celery and Italian seasoning. Saute for a minute. Stir in tomato chunks and season with salt to your liking for 2 minutes. Add in chicken broth and lemon juice to deglaze.
Add back pork tenderloin and coat the pork with the sauce. Cook until reduced slightly. Let pork rest for 2 minutes.
Serve the garlic herbed pork tenderloin over rice and sprinkle fresh green onion on top. Enjoy!
