InstantPot Lemony Cajun Shrimp and Basmati Rice

INGREDIENTS
- 1 Cup Basmati White Rice
- 1/2 stick Butter
- 1 tbsp Olive Oil
- 2 cloves Garlic minced
- 1 lbs Shrimp peeled & deveined
- 2 tbsp Cajun Seasoning
- 8 oz Tomato Sauce
- 2 whole Jalapeno Peppers chopped
- 1 tbsp Hot Sauce
- 2 cup Chicken Broth low sodium
- 1 tbsp Lemon Juice
- Chopped Parsley for Garnish
- Lemon Slice as garnish

Prep the veges and garnishes.

Set the Instant Pot into saute mode. Once heated, add butter and oil to the pot. Once the butter starts to melt, add in garlic powder & sliced jalapenos. Saute them until fragrant, about a minute.
After that, stir in Della Basmati White Rice, shrimp and half of the cajun seasoning. Stir occasionally for 3-4 minutes. Now, add the rest of the cajun seasoning, tomato sauce & hot sauce (to your liking or if needed). Stir to combine everything. Pour in the chicken broth, lemon zest, and lemon juice over it and cover with the lid.

Pressure cook on high for 3 minutes. Let it naturally pressure release/NPR for 10 minutes.
