Dijon Potato Spinach Kielbasa and Brown Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 3-4 red potatoes, cut into 1-inch pieces
- 3 tbsp water
- 2 tbsp brown sugar
- 2 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 3/4 lb smoked kielbasa, cut into 1/4-inch slices
- 3-4 cups fresh baby spinach
- 4-5 bacon strips, chopped

Make the Della Basmati Brown Rice as shown (1 cup of rice, 1 cup water, 1 tbsp butter, and salt to taste). Prep the veges.

In a pot, mix water, salt, and potatoes. Cook on high for 10 minutes until potatoes are soft. Set aside and drain.

In a big pan on medium-high heat, cook bacon pieces to your liking. While that's happening, combine brown sugar, vinegar, mustard, thyme, and pepper. Set aside the cooked bacon but keep some of the fat.
Go back to the pan. Cook onions and kielbasa until the onions are soft. Add oil and potatoes; cook and stir until they're slightly browned, about 3-5 minutes. Mix in the brown sugar mixture and bring it to a boil. Lower the heat and let it simmer for 2 minutes, stirring now and then. Add spinach and stir until it wilts. Finally, mix in the bacon.
