InstantPot Sweet and Spicy Shrimp over Basmati Rice

INGREDIENTS
- 1 Cup Basmati White Rice
- 1 Red Bell Pepper
- 2 garlic cloves
- 3/4 cup Unsweetened Pineapple Juice
- 1/4 cup Dry White Wine
- 1/4 cup Fresh Water
- 2 tbsp Soy Sauce
- 2 tbsp Thai Sweet Chili Sauce
- ¼ tsp chili flakes
- 1 lb Large Shrimp frozen
- 4 Scallions chopped, White and Greens separate
- 1 cup Pineapple Chunks drained

Prep veges and separate out the white part from the green of the scallion..

Prepare your InstantPot. Combine red bell peppers, garlic, chili flakes, pineapple juice, pineapple chunks, wine, chili sauce, soy sauce, the white parts of the scallions, and Della Basmati White Rice in the InstantPot. Mix everything thoroughly. Arrange frozen shrimp on top (ensure the shrimp are frozen to prevent overcooking).

Secure the lid and close the pressure valve. Cook on high pressure for 5 minutes. After the beep, wait for 10 minutes before releasing the remaining pressure.
