Ground Beef Potatoes with Brown Rice
Easy Cooking, Great Results
INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 2 tbsp canola oil
- 1 lb red potatoes
- 1 lb 93% lean ground beef
- 1 yellow onion
- 1/2 red bell pepper
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/4 tsp ground black pepper
- 1 to 2 tsp hot sauce plus additional for serving (I used sriracha)
- 2 green onions sliced
- Mozzarella cheese

Make the Della Basmati Brown Rice as shown (1 cup of rice, 1 cup water, 1 tbsp butter, and salt to taste). Prep the veges.

In a large skillet, heat oil over high heat. Once it's hot, lower the heat to medium and introduce the potatoes. Stir consistently until the potatoes achieve a golden hue and start to soften (they should still have a bit of firmness), which typically takes about 6 minutes.

Incorporate the beef, onion, the white part of the green onion, and bell pepper into the skillet. Cook while separating the meat. Add Worcestershire, mustard, smoked paprika, garlic powder, oregano, salt, pepper, and hot sauce (use 1 teaspoon for a mild kick, or more for a spicier taste). Continue the cooking process, breaking up the beef further, until the potatoes and onions are tender, and the meat is thoroughly cooked, which should be an additional 6 to 8 minutes. Adjust the salt and pepper to suit your taste preferences.
