Instant Pot Cuban Shrimp with Rice and Beans

INGREDIENTS
- 1 Cup Della Basmati Rice
- 1 tbsp vegetable oil
- 1 lb shrimp
- 3/4 cup chicken broth
- 1/4 cup orange juice
- 1 packet (1 oz) Taco Seasoning Mix
- 2-3 cloves garlic, minced
- 1 tsp ground cumin
- 1 can (15 oz) black beans, drained, rinsed
- 1 tbsp fresh lime juice
- 1 tbsp chopped cilantro
- 1-2 Tbsp salsa

Prep the veges and garnish.

First, turn on the Instant Pot to Saute mode and heat some oil. Put in pieces of shrimp, and sprinkle a tiny bit of salt, pepper, and cumin mix. Cook them until they come off easily from the pot. Stir and turn off the pot.

Next, add broth, orange juice, taco seasoning, garlic, and cumin. Also, put in beans, lime juice, and rice. Close the lid and set the pot to cook for 5 minutes with high pressure. After that, let it naturally release pressure for 10 minutes.

Now, spoon in some salsa, lime wedges, and sprinkle some cilantro on top. Enjoy!
