INGREDIENTS
Cook the Della Basmati Rice as instructed. Prep the veges and garnish. Cut the fish into 1-inch pieces and season them with 1/4th salt and pepper.
Heat a large frying pan over medium heat and add olive oil. While the oil is getting hot, add the sliced garlic and stir every 20 to 30 seconds to make sure all the garlic cooks evenly.
After 4 to 5 minutes, when the garlic slices are lightly browned, add the rice and season it with the rest of the red pepper flakes, salt and black pepper. Keep roasting the rice by stirring continuously. After cooking the rice without liquid for 2 to 3 minutes, gently pour in the broth. Mix everything together and stir every 3 to 4 minutes until it starts boiling.
About 12 minutes after adding the broth, most of it has been soaked up by the rice, but there's still some left, put in the pieces of cod. Mix them around evenly, then cover the pan with a lid and lower the heat to medium-low. Let it simmer for 3 to 5 minutes or until the rice and fish are cooked through.
Transfer the mixture into shallow bowls and sprinkle fresh parsley on top. Serve it right away and enjoy!
