Vegetarian White Chili with Basmati & Wild Rice

INGREDIENTS
- 1 Cup Della Basmati & Wild Rice
- 1 tbsp olive oil
- 1 yellow onion diced
- 3 chopped poblano peppers
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- ½ tsp chili powder
- 1 can no-salt-added white beans, rinsed
- 2 ½ cups lower-sodium vegetable broth
- ½ teaspoon salt & pepper to taste
- ¼ cup chopped fresh cilantro
- shredded sharp Cheddar cheese

Prepare the rice as instructed in the video. Prep the vegetables.

Add oil to the pot on medium heat. Add onions, poblanos and garlic; cook, stirring occasionally, until the vegetables just soften, about 5 minutes.

Stir cumin, oregano and chili powder, salt, pepper into the onion mixture, for 1 minute. Stir in beans, broth and salt. Let it boil and then lower heat.
Cover with lid and let it simmer for 15-20 mins, until vegetables are tender.

Garnish by sprinkle some cheddar cheese and cilantro on top. Enjoy!
