Tomato and Egg Stir Fry with Jasmine Rice

INGREDIENTS
- 1 Cup Della Jasmine Rice
- 1 tbsp of vegetable oil
- 3 eggs, beaten
- 3 tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 tsp salt & black pepper
- 1/2-1 teaspoon sugar
- Garnish: green onion, sliced

Cook Della Rice as instructed in the video. Prep the veges and beat the eggs until smooth.

Heat 1/2 tablespoon of oil in a non stick skillet over medium-high heat. Once heated, add in egg and cook until the bottom is done but the top is still a little bit raw. Mix and scramble the eggs into tiny pieces, until the eggs are cooked. Transfer to a plate.

Add 1/2 tbsp of oil with the minced garlic. Stir until fragrant. Add in tomatoes and stir fry until the tomatoes are soft in texture. Add the scrambled eggs back to the skillet. Sprinkle some salt and sugar evenly on top. Then quickly stir everything together so the flavor is distributed evenly. (Adjust seasoning as you like)

Serve over Della Jasmine Rice and garnish with green onions. Enjoy!
