Spanish Lemony Tomato Rice with Fried Eggs
Easy Cooking, Great Results
INGREDIENTS
- 1 Cup Della Basmati White Rice
- 3 tbsp extra virgin olive oil
- 1 onion
- 3 cloves garlic
- 1 tsp hot smoked Spanish paprika
- 1 can diced tomatoes 14.5 oz
- 2 cups vegetable broth
- 2 eggs
- ½ lemon, grated & juiced
- fresh parsley
- pinch sea salt
- dash black pepper

Prep the vegetables. Then rinse your Della Basmati White rice until the water becomes clear. Then add in what is shown in the video.

First, heat up a pan on the stove to medium heat and put in 2 tablespoons of oil. When it's hot, add chopped onion and garlic. Cook them until they smell really good. Then add hot paprika, lemon juice, lemon zest, and diced tomatoes. Sprinkle some salt and pepper on them. Pour in some broth and turn the heat up to high.
Once the broth starts boiling, add Della Basmati White Rice and give it a good stir. Then turn the heat down to low-medium, cover the pan, and let it simmer for 15-20 minutes. Check if the rice is cooked and if there's no more broth left.

While the rice is cooking, get another small frying pan and pour in the rest of the oil. Crack all the eggs into it. After 1-2 minutes, pour some hot oil over the eggs to help them cook. Then take them out and let them rest. Sprinkle some salt and pepper on them.
Add 2 tablespoons of chopped parsley to the rice and mix it well.

Put the rice in a dish, place a fried egg on top, and sprinkle some more chopped parsley over it. Now you can enjoy your meal!
