Sweet Sesame Ginger BBQ Chicken over Jasmine Rice

INGREDIENTS
- 1 Cup Della Jasmine Rice
- 1 tbsp olive oil
- 1 onion, finely diced
- 2 tsp of fresh ginger, minced
- 2 pcs of garlic, minced
- 2 chicken breasts, cut into 1-inch bite-sized pieces
- salt/pepper to taste
- ½ can of pineapple chunks with juice
- 1/3 cup BBQ sauce, whichever you like
- 1 tbsp cornstarch + 1 tbsp water, for thickening (optional)
- 1 tbsp sesame seeds toasted - garnish

Prepare the Della Jasmine rice as instructed.
Heat a tiny skillet on medium heat. Toast Sesame seeds for a few minutes. Stirring frequently. Set aside.

Heat up a new skillet on medium heat. Add oil, onion and sauté until transparent. Stir in garlic and ginger and cook until fragrant, about 1 minute. Stir in chicken and brown on all sides for 3-4 minutes.

Add in pineapple mixture, BBQ sauce of your choice, salt and pepper. Simmer and stir frequently for 3-5 minutes. Then combine corn starch and water. Pour into your pan and stir until thickened to your liking.

Serve with Della Jasmine White Rice and sprinkled toasted sesame on top. Enjoy!
