Turkey Sweet Potato Chili with Basmati Wild Rice Blend

INGREDIENTS
- 1 Cup Della Basmati & Wild Rice
- 2 tbsp olive oil
- 1 lb ground turkey
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 tbsp, minced seeded canned chipotle pepper in adobo sauce
- 1 can diced tomatoes
- 2 medium sweet potatoes diced
- 2 cups unsalted chicken broth
- salt & pepper to taste
- 1 lime, juiced
- Sliced avocado
- Parsley for garnish

Cook Della Basmati & Wild Rice blend as instructed. Prep the vegetables and herb.

Heat up oil to medium heat. Add ground turkey, salt, and pepper. Break it up into tiny chunks and cook for 5 minutes until browned.
Add onion & garlic. Saute for 5 minutes or until onion is transparent. Add in chipotle and stir for 1 minute until fragrant. Add in diced tomatoes, sweet potatoes, chicken broth, salt and pepper.

Heat to a boil. Cover and lower heat to simmer for 20 minutes.
Then uncover and continue to simmer for another 10 minutes. After that, add in lime juice to your liking.
