INGREDIENTS
- 1 Cup Della Jasmine Rice
- 1/3 cup of dashi
- 1 tablespoon soy sauce
- 1 tablespoon sake
- 1-2 teaspoons sugar
- 1-2 teaspoons mirin
- 1 thinly sliced yellow onion
- 1 leftover Japanese fried chicken cut crosswise into 1/2-inch strips
- 2 large eggs
- 1 scallions, thinly sliced

Rinse & prep the Della Jasmine Rice as instructed. Prep your garnishes and your chicken coating station or use leftover fried chicken (such as Chicken Katsu Rice Bowl)

Mix together some dashi (a type of broth), soy sauce, sake (a type of Japanese rice wine), sugar, and mirin (a sweet rice wine) in a small pot or pan. Heat it up until it starts to simmer.
If you're using onion, put it in the broth and let it cook until it's soft, which takes about 5 minutes. Then, add some sliced fried chicken and let it cook for another minute.

While that's cooking, beat some eggs and chop up some scallions. Pour the eggs and scallions over the chicken and broth. Cover it up and let it cook for about 1 to 2 minutes until the eggs are done the way you like them.

Pour everything over a bowl of rice. Sprinkle some more scallions on top and enjoy your meal!
