Ground Beef Tomato Brown Rice Soup

INGREDIENTS
- 3/4 Cup Della Basmati Brown Rice
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 green onion sliced as garnish
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 28oz can diced tomatoes
- 2 cups beef broth
- 1/2 tsp salt, to taste
- 1/4 tsp black pepper, to taste

Make the Della Basmati Brown Rice as shown (1 cup of rice, 1 cup water, 1 tbsp butter, and salt to taste). Prep vegetables and garnish.

Heat the olive oil in a large pot over medium-high heat. Season beef with a little bit of salt and pepper. Brown the ground beef for 8 mins, or until browned. Remove aside. (Keep some of the rendered fat for the next step).

Add in the diced onion, white part of green onion, and garlic and cook over medium heat for 5-7 minutes, or until the onion begins to soften.
Add the tomato paste, oregano, and the rest of the salt and pepper. Stir until the onion is coated, continuing to cook over medium heat for 2 minutes.
Add the beef broth and tomatoes and bring to a simmer. Simmer for 15-20 minutes, or until thickened to your liking.
Add the cooked ground beef and brown rice into the pan. Cook on low heat for 3-5 minutes. Season with salt to taste.
