INGREDIENTS
Slice the green onion and dice onion.
Dice the green and red bell peppers and put them into the same larger bowl. Set it aside.
Cut the sausage into ½-inch pieces and set it aside.
In a small bowl, mix together cayenne pepper, black pepper, smoked paprika, garlic powder, and salt to create the Cajun spice mix.
Preheat the stove to medium-high heat.
Add oil to the pan. Then, add the diced onions and sausage to the pan. Sauté for 4-5 minutes. Next, saute the bell peppers, minced garlic and 1/2 of the cajun seasoning to the pan for 2 minutes. Stir in the rice and the rest of the cajun mixture.
Pour in the fire roasted diced tomatoes with their juice and the chicken broth. Stir everything together. Increase the heat to medium-high (7.0) and bring the mixture to a boil.
Once boiling, cover the pan and reduce the heat to low (4.0). Let the mixture simmer for approximately 20 minutes until the rice is fully cooked and the liquid is absorbed.
After cooking, remove the skillet from the heat and let it sit, covered, for 5 minutes.
Plate the Cajun Sausage and Rice Skillet and garnish it with the diced green onions. Serve and enjoy this flavorful and satisfying one-pan meal! Enjoy!
