Cook the Della Basmati Rice as instructed. Prep the veges and garnish.
In a tiny bowl, combine the olive oil, lemon juice, lemon zest, salt, and pepper.
Grab a salad bowl and add in the cooked shredded chicken, rice, celery, cucumber, cherry tomato, sweet onion, and parsley. Drizzle in the lemon dressing. Toss to combine well.
Serve on a bowl and enjoy!
