One Pot Tumeric Shrimp and Rice

INGREDIENTS
- 1 Cup Della Basmati Rice
- 2 tbsp Extra virgin olive oil
- 1 red onion, chopped
- 1 red bell pepper, cored and chopped
- 2 garlic cloves, minced
- 1 cup frozen peas
- ½ cup fresh parsley
- Kosher salt
- ¾ tsp chili flakes
- ½ tsp cumin
- ½ tsp paprika
- ¼ tsp ground turmeric
- 2 ¼ cups water

Prep vegetables seasoning. Then rinse your rice until the water becomes clear and add in what is shown in the video. Start by drying off the shrimp and sprinkling a little bit of salt on them.

In a big pot or pan with a lid, heat up some olive oil on the stove over medium heat. Put in the onions, bell peppers, garlic, peas, and parsley. Sprinkle some salt and pepper on them. Cook everything for about 3 minutes, stirring it around every now and then.
Then, add in some chili pepper flakes, cumin, turmeric, and paprika. Let it cook for another 2 to 3 minutes, stirring occasionally, until the veggies start to get soft.

Next, pour in the rice and broth. Let it come to a boil, then turn down the heat to low. Put the lid on and let the rice cook for about 15 to 20 minutes until it's all cooked and not hard.
Take off the lid and gently add the shrimp into the rice. Put the lid back on and let it cook for another 3 to 5 minutes until the shrimp turns pink and is fully cooked.
