Cod with Tomato White Wine Stew and Basmati Rice

INGREDIENTS
- 1 Cup Della Basmati Rice
- 1 lb cod
- 2 tablespoons oil
- 1 medium onion
- 3 cloves garlic
- ½ cup white wine
- 14.5 ounce can diced tomatoes
- 1 cup Gordal olives ,whole
- ½ teaspoon smoked paprika
- salt and pepper, to taste
- Optional: a pinch of chili flakes
- Parsley, garnish

Prep vegetables seasoning. Then rinse your rice until the water becomes clear and add in what is shown in the video.

First, put some oil in a big pan and heat it up on the stove. Then, add chopped onion and garlic and cook them until the onion turns see-through, which takes about 3 minutes.

Next, pour in some white wine and let it get bubbly. After that, add in chopped tomatoes (with their juice), olives, smoked paprika, sea salt, pepper, and a bit of chili flakes. Let this sauce boil for a bit, then turn down the heat and let it simmer without a lid for about 5 minutes until it starts to get thicker.
Now, gently put some pieces of cod fish into the sauce, cover the pan, and let it cook for about 8 minutes until the fish is fully cooked and can easily break apart with a fork.
