Glazed Chunky Pork Loin, Vege Salad over Rice

INGREDIENTS
- 1 Cup Basmati White Rice
- 2 pork loin chops, cut into tiny chunks
- 1 Tomato, diced
- 1 Avocado, diced
- ½ Onion, diced
- 1 lime, juiced
- ¼ cup plus 1 tablespoon cider vinegar, divided
- 2 tablespoons soy sauce
- 2 garlic cloves, minced
- 1 ½ teaspoons cornstarch
- Salt & Pepper to taste

Make your Della Rice as shown in the video. Prep your veges.
Combine diced onion, tomato, avocado, lime juice and half of your salt & pepper together. Season your pork with the rest of the salt & pepper.

Heat up your skillet on medium heat and brown your pork for a few minutes on each side. While browning, add ¼ cup of vinegar, soy sauce, and garlic over pork. Bring to a boil, then simmer and cover for 5-7 minutes. (Pork cooks at 145° F)

Mix together cornstarch and and remaining vinegar together. Pour and stir into the pan. Bring to a boil until sauce is thickened.
