INGREDIENTS
Prep the veges, and combine salt & pepper to the ground beef.
Set the InstantPot to Saute, and cook the ground beef until browned (6-8 minutes - depending on your heat setting). Add in the seasonings: Diced onion, garlic powder, chili powder, cumin. Toss around for 2 minutes until mixed together evenly. Cancel Saute setting.
Add beef stock and deglaze the bottom of the InstantPot. Pour Della Basmati Rice over on top of the ground beef and gently push them down. Then add Rotel evenly over the rice, but don’t mix it in.
Cover the InstantPot and set it to Pressure Cook on Hi for 5 minutes.
Once the timer is done, let it Natural Pressure Release for 10 minutes.
Then open the lid, add in shredded cheddar cheese and mix together until melted.
Sprinkle with cilantro, extra shredded cheddar cheese, pepper as needed and serve immediately. Enjoy!
