Vietnamese Tomato Pork Chop with Brown Basmati Rice

INGREDIENTS

  • 1 Cup Della Basmati Brown Rice
  • 2 pork chops 
  • 2 cloves garlic, minced
  • 2 roma tomatoes, chopped
  • 2 green onions, sliced
  • 2 tbsp soy sauce
  • 3 tbsp brown sugar
  • 1 tsp salt & pepper to taste
  • 1 tbsp canola oil
  • 1-2 tbsp water

Step 1

  • Cook Della Basmati Brown Rice as instructed. Prep veggies. Season pork chops on both sides with salt & pepper

Step 2

  • Heat skillet over medium heat and add in oil. Once hot, add in your pork chops and let it cook for 5-8 minutes on each side, depending on thickness. (press down on pork chops for even browning) Set side.

Step 3

  • Add in green onion stalks, garlic and stir until fragrant. Stir in tomatoes and cook for a few minutes until softened. Add in soy sauce, brown sugar, water and stir all together. Let boil and then cover for a few minutes for the flavors to combine. Then add pork chops back in and ladle on the tomato sauce.

Step 4

  • Serve with Basmati Brown Rice and garnish with green onions. Enjoy!
