Turkey Sweet Potato Chili with Basmati Wild Rice Blend

INGREDIENTS

  • 1 Cup Della Basmati & Wild Rice
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp, minced seeded canned chipotle pepper in adobo sauce
  • 1 can diced tomatoes
  • 2 medium sweet potatoes  diced
  • 2 cups unsalted chicken broth
  • salt & pepper to taste
  • 1 lime, juiced
  • Sliced avocado
  • Parsley for garnish

Step 1

  • Cook Della Basmati & Wild Rice blend as instructed. Prep the vegetables and herb.

Step 2

  • Heat up oil to medium heat. Add ground turkey, salt, and pepper. Break it up into tiny chunks and cook for 5 minutes until browned.
  • Add onion & garlic. Saute for 5 minutes or until onion is transparent. Add in chipotle and stir for 1 minute until fragrant. Add in diced tomatoes, sweet potatoes, chicken broth, salt and pepper. 

Step 3

  • Heat to a boil. Cover and lower heat to simmer for 20 minutes.
  • Then uncover and continue to simmer for another 10 minutes. After that, add in lime juice to your liking.

Step 4

  • Garnish with avocado sliced and parsley. Enjoy!
