INGREDIENTS
- 1 Cup Della Basmati & Wild Rice
- 2 tbsp of olive oil
- 2 sweet potatoes, squared
- 1 onion, chopped
- salt and pepper to taste
- 1 cup of broccoli florets
- 2 spring onions, sliced, whites and greens separated, divided
- 1 clove garlic, minced
- 1 tablespoons chopped flat-leaf parsley
- 2 large eggs
Step 1
- Cook Della Basmati & Wild Rice blend as instructed. Prep the vegetables and herb.
Step 2
- Heat up a nonstick pan that’s and add oil to the pan and heat it on medium heat. Put in some onion, sweet potatoes, salt and pepper. Saute for 8-10 mins.
- Add broccoli and oil. Saute until soften, about 3-5 minutes. Now, add the white parts of the spring onions (or scallions) and garlic. Continue stirring for 1 more minute.
- Mix in the rice, the green parts of the spring onions (or scallions). Then, remove the skillet from the heat and put rice hash on another plate.
Step 3
- Heat up some more oil & crack in 2 eggs. Cook for 1:30 minutes to 4 minutes (to your liking). Remove.
Step 4
- Garnish with fried egg, salt & pepper. Enjoy!
