INGREDIENTS
- 1 Cup Della Jasmine Rice
- ½ – 1 lb Shrimp cleaned and deveined
- 2 Tbsp vegetable oil
- ½ Cup onion chopped
- 1 Tbsp garlic minced
- 1 teaspoon ginger minced
- 1 Cup bok choy chopped
- 1 Cup zucchini chopped
- ½ Cup Thai sweet chilli sauce
- 2 Tbsp soy sauce
- ½ Cup green onion
- salt & pepper per taste
Step 1
Cook the Jasmine rice as per package instructions, adding salt and butter as desired.
Prep vegetables. Season shrimp with salt and pepper.
Step 2
Heat 1 tablespoon of oil in skillet at medium high heat. Sear shrimp with 2 minutes on each side. Remove to plate.
Add remaining oil and saute onion, garlic & ginger. Saute until onions are translucent.
Add in bok choy and zucchini. Saute for 4-5 minutes.
Add in shrimp then the ingredients for the sauce: soy sauce and Thai sweet chilli sauce. Toss them for 1-2 minutes to coat everything.
Step 3
Serve on top of cooked Della Jasmine Rice and sprinkled with green onion. Enjoy!
