INGREDIENTS
- 1 Cup Della Basmati & Wild Rice
- 1 lb Ground Pork
- 2 tbsp vegetable oil
- 1 cup onion, diced
- 1 green bell pepper, diced
- 1 – 2 cloves garlic, minced
- 1 cup diced tomatoes (canned, drained)
- 2 cups low-sodium vegetable broth
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt + pepper, to taste
- fresh chopped cilantro
Step 1
- Prep the veges. Mix salt and pepper into ground pork.
Step 2
- Heat pan with oil and add in ground pork. Stir until pork sausage has rendered down. Remove from pan. Pour rendered fat into a pot.
- Add in onion and bell pepper and cook for 3 minutes. Season with salt and pepper. Add in garlic and Della Basmati & Wild Rice, roast for another 5 minutes. Stirring frequently until rice get slightly toasted.
- Add in the broth, diced tomatoes, oregano, garlic powder, onion powder, salt, pepper and mix together.Bring to a boil, cover, reduce heat to low and simmer for 15 – 17 minutes.
Step 3
- Remove cover and add back in the cooked ground pork. Then, fluff rice mix with a fork, and let set for 15 minutes to absorb the rest of the liquids.
Step 4
- Scoop onto a bowl and sprinkle with cilantro. Enjoy!
