One-Pot Beef and Jasmine Rice

INGREDIENTS

  • 1 Cup Della Jasmine Rice
  • 2 tsp sesame oil
  • 1 white or yellow onion, diced
  • ½ carrot julienned 
  • 1 pound lean ground beef
  • 1 tsp salt 
  • ½ tsp pepper
  • ¼ cup low sodium soy sauce
  • 1 ½ cups beef broth
  • 1 tablespoon minced garlic
  • 1 tsp minced ginger
  • ¾ tsp red pepper flakes
  • 2 tsp brown sugar
  • 1 tbsp green onion 
  • 1 Tsp sriracha *Optional*

Step 1

  • Prep vegetables. Combine soy sauce, minced garlic, minced ginger, red pepper flakes, and brown sugar in a bowl. Whisk to combine and set it aside. 

Step 2

  • Heat sesame oil in a large soup pot over medium heat.
  • Add the diced onion and cook until it becomes translucent. Add the ground beef to the pot and cook until it is browned and cooked through.

Step 3

  • Once the beef is cooked, stir in the rice, beef broth, and soy sauce mixture. Bring the mixture to a boil over medium-high heat.
  • Reduce the heat to medium-low and cover the pot with a tight-fitting lid. Let it simmer for 18-22 minutes, or until the rice is cooked and has absorbed the liquid.
  • Remove the pot from the heat and let it sit for 8-10 minutes to allow the flavors to meld and the rice to fully absorb the liquid.

Step 4

  • Serve the One-Pot Beef Fried Rice immediately, garnished with carrot, sriracha and fresh spring onion. Enjoy!
