INGREDIENTS
- 1 Cup Della Jasmine Rice
- 1 Polska sausage, sliced
- 1 red onion, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 carrots, julienned or thinly sliced
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tbsp Butter
- ¼ tsp chili flakes
- 1 tablespoons soy sauce
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 tbsp Salt and ½ tsp pepper, to taste
- Fresh cilantro, for garnish
Step 1
- Cook the jasmine rice according to package instructions and set aside.
- Prep vegetables. Whisk lemon juice, zest, soy sauce, honey, and black pepper.
Step 2
- In a large skillet or wok, heat olive oil over medium-high heat. Add the sliced Polska sausage and cook until browned and heated through, about 4-5 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced red onion, sliced bell peppers, carrots, and minced garlic. Stir-fry for 4-5 minutes, until the vegetables are crisp-tender. Pour the lemon sauce over the vegetables and stir. Add the cooked sausage to the skillet and stir-fry for an additional 2-3 minutes until everything is heated through.
Step 3
- Season with salt and pepper to taste. Garnish with fresh cilantro and serve. Enjoy!
