Korean Pork and Rice Skillet

INGREDIENTS

  • 1 Cup Della Jasmine Rice
  • 2 pc of pork tenderloin medallion
  • 1 tbsp soy sauce
  • 1 tsp gochujang (Korean chili paste)
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves of garlic, minced
  • 1 red onion, thinly sliced
  • 1 tsp ginger
  • 1 carrot, julienned
  • Salt and pepper to taste
  • 2 cups water
  • Optional toppings: sliced green onions, toasted sesame seeds

Step 1

  • Make the rice as instructed in a pot or InstantPot (video).

    In a bowl, combine the soy sauce, gochujang, honey, sesame oil, and minced garlic. Add the thinly sliced pork to the bowl and marinate for at least 30 minutes.

Step 2

  • Heat sesame oil over medium heat. Add in onion and carrots, saute for 2-3 minutes. Then add in ginger and saute until fragrant.

    Stir in the marinated thinly sliced pork and cook for 5 minutes or until browned.

Step 3

  • Serve the Korean pork and rice skillet hot, and garnish with sliced green onions and toasted sesame seeds, if desired.
