INGREDIENTS
- 1 Cup Della Jasmine Rice
- 1/3 cup of dashi
- 1 tablespoon soy sauce
- 1 tablespoon sake
- 1-2 teaspoons sugar
- 1-2 teaspoons mirin
- 1 thinly sliced yellow onion
- 1 leftover Japanese fried chicken cut crosswise into 1/2-inch strips
- 2 large eggs
- 1 scallions, thinly sliced
Step 1
- Rinse & prep the Della Jasmine Rice as instructed. Prep your garnishes and your chicken coating station or use leftover fried chicken (such as Chicken Katsu Rice Bowl)
Step 2
- Mix together some dashi (a type of broth), soy sauce, sake (a type of Japanese rice wine), sugar, and mirin (a sweet rice wine) in a small pot or pan. Heat it up until it starts to simmer.
- If you’re using onion, put it in the broth and let it cook until it’s soft, which takes about 5 minutes. Then, add some sliced fried chicken and let it cook for another minute.
Step 3
- While that’s cooking, beat some eggs and chop up some scallions. Pour the eggs and scallions over the chicken and broth. Cover it up and let it cook for about 1 to 2 minutes until the eggs are done the way you like them.
Step 4
- Pour everything over a bowl of rice. Sprinkle some more scallions on top and enjoy your meal!
