INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 3-4 red potatoes, cut into 1-inch pieces
- 3 tbsp water
- 2 tbsp brown sugar
- 2 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 3/4 lb smoked kielbasa, cut into 1/4-inch slices
- 3-4 cups fresh baby spinach
- 4-5 bacon strips, chopped
Step 1
- Make the Della Basmati Brown Rice as shown (1 cup of rice, 1 cup water, 1 tbsp butter, and salt to taste). Prep the veges.
Step 2
- In a pot, mix water, salt, and potatoes. Cook on high for 10 minutes until potatoes are soft. Set aside and drain.
Step 3
- In a big pan on medium-high heat, cook bacon pieces to your liking. While that’s happening, combine brown sugar, vinegar, mustard, thyme, and pepper. Set aside the cooked bacon but keep some of the fat.
- Go back to the pan. Cook onions and kielbasa until the onions are soft. Add oil and potatoes; cook and stir until they’re slightly browned, about 3-5 minutes. Mix in the brown sugar mixture and bring it to a boil. Lower the heat and let it simmer for 2 minutes, stirring now and then. Add spinach and stir until it wilts. Finally, mix in the bacon.
