Cod with Tomato White Wine Stew and Basmati Rice

INGREDIENTS

  • 1 Cup Della Basmati Rice
  • 1 lb cod
  • 2 tablespoons oil
  • 1 medium onion 
  • 3 cloves garlic 
  • ½ cup white wine
  • 14.5 ounce can diced tomatoes
  • 1 cup Gordal olives ,whole
  • ½ teaspoon smoked paprika
  • salt and pepper, to taste
  • Optional: a pinch of chili flakes
  • Parsley, garnish

Step 1

  • Prep vegetables seasoning. Then rinse your rice until the water becomes clear and add in what is shown in the video.

Step 2

  • First, put some oil in a big pan and heat it up on the stove. Then, add chopped onion and garlic and cook them until the onion turns see-through, which takes about 3 minutes. 

Step 3

  • Next, pour in some white wine and let it get bubbly. After that, add in chopped tomatoes (with their juice), olives, smoked paprika, sea salt, pepper, and a bit of chili flakes. Let this sauce boil for a bit, then turn down the heat and let it simmer without a lid for about 5 minutes until it starts to get thicker. 
  • Now, gently put some pieces of cod fish into the sauce, cover the pan, and let it cook for about 8 minutes until the fish is fully cooked and can easily break apart with a fork. 

Step 4

  • Finally, sprinkle some parsley on top and enjoy your meal!
