INGREDIENTS
- 1 Cup Della Basmati White Rice
- 1 pound boneless skinless chicken thigh, cut into 1-inch chunks
- 1 garlic, minced
- 1 (1.25-ounce) package taco seasoning
- 1 cup low sodium chicken broth
- 1 (15-ounce) can corn kernels, drained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup salsa
- 1 (4.5-ounce) can chopped green chiles
- 1 cup shredded Mexican blend cheese
- 1 tbsp cilantro
Step 1
Chop cilantro, mince garlic, slice chicken thighs into chunks and mix well with the taco seasoning.
Step 2
Add in the taco seasoned chicken and chicken broth to the Instant Pot and combine.
Add in corn, black beans, salsa and green chiles, minced garlic, and Della Basmati White Rice.
Step 3
Set Instant Pot pressure to Hi and set the timer for 10 minutes. When it’s finished cooking, quick-release the pressure.
Stir in the Mexican Blend Shredded Cheese and put back on the lid so it melts.
Step 4
- Garnish with chopped cilantro & salsa chips. Enjoy!
