INGREDIENTS

  • 2 cups Della Basmati & Wild Rice, cooked as directed
  • 2 cup Chicken, cooked and shredded
  • 1 Onions, chopped
  • 2 Garlic, chopped
  • 3 Carrots, chopped
  • 2 Red Bell Pepper, diced
  • 2 Tomatoes, diced
  • 2 cup of Chicken Stock
  • Season with: salt, pepper, chopped parsley, herbs de Provence
  • Top with: grated parmesan (optional)

Step 1

  • Heat oil in a large pot or dutch oven, add onions, garlic, carrots, and bell pepper. 

Step 2

  • Cook at med heat until softened. Add chicken stock, cooked rice, chicken, tomatoes and spices. Stir and allow to come to a boil.

Step 3

  • Turn heat to low and simmer about 25-30 min. Pour in a bowl, top with parmesan cheese, and serve with a piece of warm crusty bread! Enjoy!
