Cajun Swai over Salad with Brown Basmati Rice

INGREDIENTS

  • 1 Cup Della Basmati Brown Rice
  • 1 Swai fillet
  • 1 lime, sliced & juiced
  • 1 jalapeno, sliced
  • 2 garlic cloves, minced
  • 1 tbsp canola oil
  • 1 tbsp butter
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cajun seasoning
  • ½ tsp black pepper
  • 1 cup salad mix

Step 1

  • Cook Della Basmati Brown Rice as instructed. Prep veggies. Season swai fish on both sides. 

Step 2

  • Heat skillet at medium heat, add in oil & butter. Once melted, stri in garlic & jalapeno and cook until fragrant. Add in seasoned swai and cook it for 2-3 mins on each side. Set fish aside. Add in lemon juice and deglaze the pan with the garlic and jalapeno. 

Step 3

  • Serve with salad mix, brown rice, cajun swai and top with the jalapeno garlic lime sauce. Enjoy!
