INGREDIENTS
Cook 1 Cup of Della Basmati White Rice as instructed.
Place a cast iron skillet over medium heat and add olive oil. Add chopped onion and garlic to hot skillet and cook until onions are cooked through.
Next, add the bell peppers, eggplant, zucchini. Add Herbs de Provence. Let this cook an additional 10 min.
Add fresh tomatoes and canned tomatoes and cook for another 5 min.
Once mixture is thick and bubbly, add a generous amount of fresh basil and serve over warm rice. Salt and pepper to taste. Enjoy!
