INGREDIENTS
- 1 Cup of Della Basmati White Rice, cooked as directed
- 1 Tbsp olive oil
- 1 Red Onion, chopped
- 3 Cloves Garlic, finely chopped
- 1 Eggplant, chopped
- 1 Zucchini, chopped
- 1 Orange Bell Pepper, chopped
- 1 Yellow Bell Pepper, chopped
- 2 Tomatoes, chopped
- 1 Cup Canned Diced Tomatoes
- 1 Tbsp Herbs de Provence
- Fresh Basil, about 2 Tbsp, chopped
Step 1
- Cook 1 Cup of Della Basmati White Rice as instructed. 
Step 2
- Place a cast iron skillet over medium heat and add olive oil. Add chopped onion and garlic to hot skillet and cook until onions are cooked through. - Next, add the bell peppers, eggplant, zucchini. Add Herbs de Provence. Let this cook an additional 10 min. - Add fresh tomatoes and canned tomatoes and cook for another 5 min. 
Step 3
- Once mixture is thick and bubbly, add a generous amount of fresh basil and serve over warm rice. Salt and pepper to taste. Enjoy!
