Peaches 'n Cream Rice Pudding Pops

I know what you are thinking. Rice? In a popsicle? Trust me. It's actually fantastic. We paired rice, and a creamy base & favorite August fruit, the peach for a healthy and cooling treat!

INGREDIENTS
- 1 Cup Della Jasmine Rice
- 2 cups water
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1-2 ripe peaches, peeled and diced
- 1/4 cup honey
- 1/4 cup graham cracker crumbs

Rinse the Della Jasmine Rice under cold running water until the water runs clear. Drain the rice and set aside.
In a medium saucepan, bring the water to a boil over high heat. Add the rice and reduce the heat to low. Cover the saucepan and simmer for about 18-20 minutes, or until the rice is cooked through and the water has been absorbed.

In a separate large saucepan, combine the cooked rice, milk, sugar, and salt. Cook over medium heat, stirring occasionally, for about 20-25 minutes or until the mixture is thick and creamy.
Remove from heat and stir in the vanilla extract and heavy cream. Let cool to room temperature.

In a blender, puree the diced peach and honey until smooth or chunky, to your liking!
Mix your rice pudding and peach-honey together and fill up your popsicle mold. Insert popsicle sticks and freeze for at least 6 hours or until firm.
To serve, remove the popsicles from the molds. Enjoy!
