INGREDIENTS
Cook the jasmine rice according to package instructions and set aside.
Prep vegetables. Whisk lemon juice, zest, soy sauce, honey, and black pepper.
In a large skillet or wok, heat olive oil over medium-high heat. Add the sliced Polska sausage and cook until browned and heated through, about 4-5 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced red onion, sliced bell peppers, carrots, and minced garlic. Stir-fry for 4-5 minutes, until the vegetables are crisp-tender. Pour the lemon sauce over the vegetables and stir. Add the cooked sausage to the skillet and stir-fry for an additional 2-3 minutes until everything is heated through.
Season with salt and pepper to taste. Garnish with fresh cilantro and serve. Enjoy!
