Lemon Chicken Rice Salad

INGREDIENTS

  • 1 Cup Della Basmati Rice
  • 2 tablespoons olive oil
  • 1 tablespoons fresh lemon juice
  • 1/2 teaspoon finely grated lemon zest
  • Kosher salt and freshly ground pepper (to taste)
  • 1 cup shredded cooked chicken
  • 1 cup cooked rice (any kind)
  • 1 cup diced celery
  • 1 cup diced cucumber
  • 1/2 cup diced cherry tomatoes
  • 1/2 cup chopped sweet onion
  • 1/4 cup chopped parsley

Step 1

  • Cook the Della Basmati Rice as instructed. Prep the veges and garnish.

Step 2

  • In a tiny bowl, combine the olive oil, lemon juice, lemon zest, salt, and pepper.

Step 3

  • Grab a salad bowl and add in the cooked shredded chicken, rice, celery, cucumber, cherry tomato, sweet onion, and parsley. Drizzle in the lemon dressing. Toss to combine well.

Step 4

  • Serve on a bowl and enjoy!
