INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 1/4 cup lime juice (to taste)
- 1-3 lime wedges
- 1/4 cup olive oil
- 1 tbsp honey
- 1/4 tsp chipotle powder
- 1/4 tsp cumin powder
- 1/4 tsp garlic powder
- 1/2 tsp salt (to taste)
- 1/2 tsp black pepper (to taste)
- 1 red capsicum/bell pepper
- 1 green capsicum/bell pepper
- 1 small red onion
- 7oz corn kernels, canned
- 7oz black bean, canned
- 1 tomato, chopped
- 1/2 – 1 cup shredded Cheddar cheese
- 1/4 cup cilantro leaves
Step 1
- Make the Della Basmati Brown Rice as shown (1 cup of rice, 1 cup water, 1 tbsp butter, and salt to taste).
Step 2
- Prep the veges and salad dressing.
- Combine all lime juice, olive oil, honey, chipotle powder, cumin powder, garlic powder, salt and black pepper until mixed well.
Step 3
- Add all the other ingredients and cooked rice in a bowl. Drizzle on top with the dressing.
Step 4
- Toss and mix all ingredients together and portion into bowls. Garnish with a lime wedge. Enjoy!
