Instant Pot Cuban Shrimp with Rice and Beans

INGREDIENTS

  • 1 Cup Della Basmati Rice
  • 1 tbsp vegetable oil
  • 1 lb shrimp 
  • 3/4 cup chicken broth 
  • 1/4 cup orange juice
  • 1 packet (1 oz) Taco Seasoning Mix
  • 2-3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 can (15 oz) black beans, drained, rinsed
  • 1 tbsp fresh lime juice
  • 1 tbsp chopped cilantro
  • 1-2 Tbsp salsa

Step 1

  • Prep the veges and garnish.

Step 2

  • First, turn on the Instant Pot to Saute mode and heat some oil. Put in pieces of shrimp, and sprinkle a tiny bit of salt, pepper, and cumin mix. Cook them until they come off easily from the pot. Stir and turn off the pot.

Step 3

  • Next, add broth, orange juice, taco seasoning, garlic, and cumin. Also, put in beans, lime juice, and rice. Close the lid and set the pot to cook for 5 minutes with high pressure. After that, let it naturally release pressure for 10 minutes.

Step 4

  • Now, spoon in some salsa, lime wedges, and sprinkle some cilantro on top. Enjoy!
