InstantPot Lemony Cajun Shrimp and Basmati Rice

INGREDIENTS

  • 1 Cup Basmati White Rice
  • 1/2 stick Butter
  • 1 tbsp Olive Oil
  • 2 cloves Garlic minced
  • 1 lbs Shrimp peeled & deveined
  • 2 tbsp Cajun Seasoning
  • 8 oz Tomato Sauce
  • 2 whole Jalapeno Peppers chopped
  • 1 tbsp Hot Sauce
  • 2 cup Chicken Broth low sodium
  • 1 tbsp Lemon Juice
  • Chopped Parsley for Garnish
  • Lemon Slice as garnish

Step 1

  • Prep the veges and garnishes.

Step 2

  • Set the Instant Pot into saute mode. Once heated, add butter and oil to the pot. Once the butter starts to melt, add in garlic powder & sliced jalapenos. Saute them until fragrant, about a minute.
  • After that, stir in Della Basmati White Rice, shrimp and half of the cajun seasoning. Stir occasionally for 3-4 minutes. Now, add the rest of the cajun seasoning, tomato sauce & hot sauce (to your liking or if needed). Stir to combine everything. Pour in the chicken broth, lemon zest, and lemon juice over it and cover with the lid.

Step 3

  • Pressure cook on high for 3 minutes. Let it naturally pressure release/NPR for 10 minutes.

Step 4

  • Garnish with chopped parsley and lemon slices. Enjoy!
